I am not sure if my permanent hunger has something to do with this lady Isa Chandra Moskowitz and her project called “The Post Punk Kitchen”.., half a year ago I have bought her book Appetite for Reduction, which has also the best cover picture design as you can see here (hasn’t it?)
And of course all of the illustrations in the book are amazing (they are made in pin-up, tattoo style). The other thing you have to appreciate about this vegan cookbook is the style of Isa’s writing, she is great in creating relaxed atmosphere – for me is it like have a dialogue with author, like she is one of the friend of mine. As she has a talent to predict the needs of her audience (I really love the style how she even mentions time which is needed for preparing each meal…and yes, the time for active and passive preparation. How smart and catchy 😉
On the Wednesday night I just went through some of their cooking videos. One of the recipe seemed to be extraordinary suitable for me it is called Mac & Cheese (vegan cashew based cheese, of course). Since I have bought new food processor (what I have mentioned one post before), there was no other obstacle to try it. I was extremely surprised when my boyfriend come back to home from work and declared to me, that this one cooking session will be not only photographed, but we also have tried to make own video (the postproduction process hasn’t started yet 🙂 but when the result will be fine, I will post it. Ok, I just have realized how much I can write about something what is a passion for me, as vegan food is. Now, I need to be brief.
Here is a picture of our version of Mac and Cheese (we were following the Isa’s recipe, only some exceptions were made in the case of spices and an amount of garlic – because we love garlic so much. Here is also the whole list of ingredients:
- 1/2 pound macaroni or other small pasta
- 3/4 cups cashews, soaked in water for 2 hours
- 2 teaspoons olive oil
- 1 small yellow onion, diced medium
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 1/2 tablespoons organic cornstarch
- 1 tablespoon nutritional yeast (optional)
- 1 roasted red pepper (jarred or homemade)
- 1 tablespoon tomato paste
- 1 1/2 teaspoons pizza seasoning (see note)
- 1/2 teaspoon salt
- 1 teaspoon ground mustard
- 1/2 teaspoon turmeric
